New Property BM11

Hi Guys, just moved into  a property with a BM11; few questions
*I have a small remote digital timer, with minimal instructions re setting times, but only seems to set heating schedules
*I don't seem to be able control hot water, there is no timer control on the tank itself??  My only control is to switch off the boiler
*I am removing a rad tomorrow from my ensuite and moving etc...apart from isolating the other rads, is this a self fill system as i cannot find a loop, how do i isolate the incoming top up?
*Same problem closing hot and cold taps?

The only control i seem to find is a thermostat control 2 pipe down, twist head.  If i close this the hot water to taps stop but then runs cold water?

Any help to all of these please gents/ladies
