Ok, I think what we have is a heat exchanger that has restricted flow in. When it over heats (because I have the thermistor out of it's pocket) and shuts down, you can hear the water trickling into to it, filling it up, when it is full again the themp at the thermistor pockets drops quickly back to the temp of the circulating water and not the superheated air space it creates when firing.

I have tried Senitnal 800 cleaning stuff but no fifference, anything stronger anyone would suggest before I contemplate removing the heat exchanger for cleaning or replacement.

Check that the unit will take water from the top tank.
